Have you ever felt you were tired of eating the same dinner for 2 or 3 days? Has the thought crossed your mind to toss it out. But then you see visions of hungry starving children and you feel guilty. Stop, when in doubt DON’T chuck out! That’s my motto!
My husband has dubbed me the recycling Queen because I love using leftovers to create something new. I call it “Upcycling” and that refers to food too!
By using any left over Chicken or meat from last night’s dinner you can create something really delicious. I often add a packet of 2-minute noodles and some Asian sauces, to create a more Asian inspired dish.
You can also make delicious Chicken Croquettes with left over Roast chicken dinner. Just combine chicken and roasted vegies, a little onion and parsley and 1 egg. Blitz it up and shape into long croquettes. Roll them in flour, then beaten egg and breadcrumbs and shallow fry. Having a few fresh or even frozen vegies and some pantry staples helps to create an easy dinner.
Left over Risotto is also perfect for moulding Arancini Balls (rice balls). Shape into a ball and stuff with a piece of Mozzarella cheese, then coat in crumbs and deep fried.
Pot Pies or Pasties
Another idea is using left over stew to make Pot Pies or Pasties. Fill a couple of ramekins sprinkle with grated cheese, whack a piece of frozen puff pastry, glaze with beaten egg and bake in a hot oven for 25 minutes.
What about eggs – a stuffed Omelette? You can get adventurous and make a Spanish Omelette. There are endless possibilities, you’ve just got to work with what you’ve got. You don’t need a recipe, just be creative. Once you’ve achieved one, the rest comes easy and it’s always a challenge.
I created this light lunch option today in less than 20 minutes. Crumbed Fish with a quick salad. I used whatever was in the fridge. Salad leaves, avocado, cherry tomatoes, cucumber, carrot ribbons, petite bocochino, red onion and pickled ginger. The crumbed fish was store bought. Okay, I cheated! A quick shallow fry in a pan for 5 mins on each side and lunch was sorted!
