Quinoa Breakfast Bowl
I love starting my day with a nutritious bowl of porridge sprinkled with nuts and seeds.
Today, I felt like something different and wanted to share an easy recipe. I cooked 1 cup of white Quinoa in a little water. As soon as it comes to the boil, tip out the water. This gets rid of the outer coating that may upset some people. Then use fresh water to just cover and cook for about 10 minutes till the water has absorbed. Cool in the pan. At this stage you can store it in the fridge for use later either as sweet or savoury. To create a breakfast bowl, place 1/2 cup of the cooked Quinoa in a bowl, add nuts and dried fruit of your choice. Also fresh fruit like bananas, blueberries, mango are excellent. Sprinkle with a tablespoon of Maple Syrup and serve with Cinnamon and Yoghurt. You don’t need a recipe for this. Do whatever takes your fancy but make it colourful. Remember you eat with your eyes!
